Basic Guacamole Recipe
The most basic recipe for the popular mashed avocado mixture
known as guacamole includes one tablespoon of fresh lime or lemon
juice for every two mashed avocados. The amount of juice
can be adjusted to taste. Other ingredients sometimes mashed into the mixture include
salt, onions, garlic, cilantro. oregano, and chile powder.
Ingredients sometimes stirred in after mashing
or sprinkled on top of the guacamole
include chopped tomatoes, sliced black olives,
sliced green onion, and shredded cheese.
Basic Burrito Recipe
Roll cooked meats or vegetables in a flour tortilla.
Add shredded cheese and salsa. Eat the burrito cold or
heat it in a frying pan, conventional oven,
or microwave oven. One of my favorite burrito
recipes includes a filling of refried beans,
finely chopped onions, sliced canned green chiles,
and jack cheese, rolled in a flour tortilla and
baked in a conventional oven until the
cheese is melted and the tortilla
is very slightly browned and starting to become
crisp on the edges.
Basic Enchilada Recipe
Saute corn tortillas in hot lard (most authentic) or
hot oil for a few seconds until tortillas are
soft but not brown. Roll each tortilla around the
enchilada filling you are using, and lay each rolled
tortilla in a baking dish. Top with enchilada sauce,
top with cheese, and bake until the fillings are
hot and the cheese on top is melted. One of the easiest
enchilada fillings is shredded cheese
with or without chopped onions.
